leeks with rice


Ingredients
  • 2pounds leeks
  • 1/3 cup long grain rice
  • 1/2 olive oil
  • 1/2 cup diced tomatoes
  • 2-3 cups water
  • 3/4 tablespoon salt
  • pepper
  • lemon
Instructions
Cut the green leaves from the leeks (you can leave a small part if you want).
Trim off the roots, and remove the outer layer of the leeks.
Wash them very well.
Slice the leeks lenghtwise and cut the halves into smaller pieces (about 1 inch long).
In a saucepan heat the olive oil over medium to high heat.
When is hot add the leeks and cook stirring for 2'-3', until they are glossy and begin to produce liquid.
Reduce the heat to low and simmer for about 10'.
Add the diced tomatoes and 2 cups water , and simmer for 10' (beware lest it needs some more water).
Add the rice , salt , pepper and some lemon zest and simmer for another 10' stirring occasionally.
It shouldn't has much liquid at the end.
Serve it with a little lemon juice on each plate.
