lentil soup


Ingredients
  • 1/2 pound dried lentils (brown in the picture , also small lentils are much better than larger ones)
  • 1/2 cup olive oil
  • 1 medium onion chopped
  • 2-3 gloves garlic cut in halves
  • 1/3 cup diced tomatoes , plus 1/3 tablespoon tomato paste
  • 2 bay leaves
  • 1 teaspoon oregano
  • salt, pepper
  • vinegar

Instructions
Rinse the lentils and place them in a saucepan with 1 lt water.
Bring over medium heat and when they start to boil remove from heat and drain them.
Place , back into the saucepan , the lentils and 1 lt (or a little more) water.
simmer for 10'.
Add the chopped onion , garlic halves , bay leaves , diced tomatoes and tomato paste.
Simmer for 15-20' and add olive oil , salt , pepper and oregano.
At this point you can add some water , depends on how thick you want the soup.
Simmer for 10'.
Remove the bay leaves before you serve.
Try it adding 1 teaspoon vinegar (or lemon juice) in each soup bowl.
