mushroom tomato sauce spaghetti


Ingredients
  • 1 package of your favorite spaghetti
  • 1 package (8 ounces or 1,5 cup) of button (white) mushrooms cut into small pieces
  • 1 can (14,5 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • 1-2 cloves garlic cloves chopped into small slices
  • 3-4 tablespoon olive oil
  • a pinch of sugar, salt, pepper and about 1/4 teaspoon oregano
  • pamesan or feta cheese

Instructions
Cook the spaghetti according to package instructions.
I personally prefer to add 2-3 tablespoons hot olive oil into the spaghetti after draining.

Heat the olive oil in a medium saucepan over medium heat.
Add the garlic and stir it for about 1' (be careful not to turn brown).
Add the mushrooms.
Turn the heat slightly up and cook the mushrooms until they begin to fry.
Add the diced tomatoes, the tomato paste, water, and sugar.
Reduce the heat and simmer for 15'.
Add salt, pepper and the oregano, and simmer for another 2'.

Serve the spaghetti with sauce and parmesan on the top (my preference ...feta cheese).
