marinated chicken



Ingredients
  • 4 boneless , skinless chicken breasts
  • 6-8 potatoes depends on size
  • 1 green , 1 yellow and 1 red pepper
  • 2 oranges (juice)
  • 1 lemon (juice)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1/3 cup olive oil
  • salt, black pepper, marjoram

Instructions
Preheat the oven to 200 degrees C or 400 degrees F.
Put in a bowl (in size to fit the chicken breasts) the honey with one tablespoon orange juice and stir until melted.
Add the rest of the juices, balsamic vinegar and some marjoram.
Place the chicken breasts in the bowl with the marinade and let it stay in the fridge for 1-2 hours, at least.
Rinse the peppers remove the seeds and stem and cut into small pieces.
Cut the potatoes into thick pieces and toss them with salt and black pepper.
Remove the chicken breasts from marinade (do not discard marinade) , toss with salt and black pepper and place them in the center of a pan. Put around the potatoes. Put the peppers on the top of the chicken breasts.
Pout the marinade over chicken breast and potatoes.
Pour over the olive oil.
Roast for an 50-60'.
