halva


Ingredients

  • 3/4 cup vegetable oil
  • 2 cups semolina
  • 2,5 cups sugar
  • 3/4 cup chopped walnuts (optional)
  • 5 cups water (alternate 3 cups water and 2 cups freshly squeezed orange juice)
  • 1/2  teaspoon cinnamon, a pinch of clove powder (optional0
  • juice of 1/2 lemon


Instructions
Bring a saucepan with sugar and water over high heat.
When it starts to boil reduce the heat to low and add orange juice, lemon juice,  cinnamon and clove.
Boil for 2'.
In a large saucepan heat the vegetable oil over high heat.
Reduce the heat to medium and add the walnuts, stir and roast for a while.
Add semolina and stir constantly until it turns golden light brown.
Reduce the heat to low, and pour carefully the syrup into semolina.
Stir the mixture and when it starts to make thick bubbles remove from heat.
Watch out, some bubbles maybe spilled on you.
Cover and let it stay for 2'.
Pour it in a form or individual forms or bowls.
Sprinkle on some cinnamon when you serve it.
