tuna salad



Ingredients
  • 1-2 cans or jars solid white tuna packed in water (there is a variety of 5-7 ounces)
  • 2-3 carrots chopped into small pieces
  • 1 1/2 cup peas (I usually use frozen)
  • 1 1/2 cup yellow corn
  • 1 medium tomato cut into small pieces or about 10 cherry tomatoes cut in halves
  • 1/2 big cucumber or 1 small cut into slices 
  • some arugula (as much as you like)
  • 1 tablespoon light mayonnaise
  • 1 tablespoon mild mustard
  • 1 tablespoon white vinegar
  • 3 tablespoons olive oil
  • juice of 1/2 lemon
  • salt and pepper

Instructions
To make the dressing put in a small jar mayonnaise, mustard, vinegar, olive oil, a pinch salt and some freshly ground pepper.
Cover, shake very well and set aside.
Cook peas and corn for a few minutes, drain and set aside to cool.
Chop carrots.
Cut tomatoes and cucumber.
Drain tuna and place it in a big bowl.
Break tuna with a fork.
Pour the juice of 1/2 lemon on tuna and sprinkle on some freshly ground pepper.
Add peas, corn, carrots sprinkle on some salt and stir to unite.
Add tomatoes, cucumber and arugula sprinkle on a pinch of salt and pepper and stir.
Just before you're going to serve the salad add the dressing and stir very well.

PS. alternative dressing: juice of 1-2 lemons and 1/4 cup olive oil.
