grilled sardines


Ingredients
  • sardines 
  • olive oil 
  • oregano 
  • salt

Instructions
Some kind of sardine has soft scales.
So, to clean them lightly rub them with your fingers.
Remove the heads (optional).
Run your finger along the bottom of the fish and remove the intestines and entrails.
Rinse and place the fish aside to dry.
Salt fish to taste.
Brush a grilling skillet with olive oil, heat it over medium/high heat and place sardines.
Sprinkle on some oregano both sides.
When the skillet is too hot it takes about 2’ minutes each side to grill the fish.

enjoy it with a big greek salad

PS. I personally use an oventop nonstick grilling skillet (from IKEA).
