plum pie


Ingredients
  • 500 g or 1 pound plums
  • 2 cups almond meal
  • 1/4 cup cornstarch
  • 1 tablespoon baking powder
  • 3 eggs
  • 1 cup sugar
  • 7 oz or 200 g greek yogurt
  • 1/2 teaspoon vanilla extract

Instructions                                                                
Preheat oven to 170° C or 330° F.
Wash the plums, remove pits and cut into slices.
In a bowl, whisk the almond meal with the cornstarch and baking powder.
In another bowl, beat the eggs with the sugar and just the mixture become fluffy, add the yogurt and stir to unite.
Add vanilla extract.
Gradually add the almond meal mixture.
Add some plum pieces.
Line a 9 inch round baking pan with parchment paper.
Place in the bottom the plum slices and pour the mixture.
Bake for  about 40’. Cover the pie with an aluminum foil and bake for additional 15’.
Remove the pie from the oven.
Let it cool and serve with powered sugar or whipped cream.
