green beans


Ingredients
  • 2 pounds or 1 kg green beans
  • 2-3 medium ripe tomatoes (puree)
  • 1 big onion finely chopped
  • 2/3 cloves of garlic
  • 1/2 bunch parsley finely chopped
  • 3/4 cup olive oil
  • salt and pepper

Instructions
Cut the ends of green beans, rinse them very well and set aside.
Puree the tomatoes.
Bring a saucepan over high heat and pour the olive oil.
Heat the olive oil and add onion.
Stir the onion and when starts to wilt add the green beans.
Reduce the heat to medium and stir the green beans until they start to change their color to darker and brighter green.
Add garlic and tomato puree, 1 cup water, reduce the heat to low and cook for 50’.
Add parsley, salt and ground pepper, cook for additional 5-10’.

PS. Best way to eat green beans: fresh warm bread and feta cheese.
