salad with chicken nuggets


Ingredients
for 2
  • 10-12 pieces of chicken nuggets
  • mixed greens
  • 10-12 cherry tomatoes cut in halves
  • 1 cup sweet corn
  • some arugula (about a cup)
  • 1/4 of a parsley bunch finely chopped
  • 1/4 of a dill bunch finely chopped
  • juice of 1 lemon
  • 1 tablespoon lemon zest
  • 4-5 tablespoons olive oil
  • salt & pepper

Instructions
Preheat the oven to 400° F or 200° C.
Place the chicken nuggets into a baking pan, drizzle on some drops vegetable oil and bake for 10-15’.
Let chicken nuggets cool down.
In a small bowl whisk (using a fork) lemon juice and olive oil.
In a big bowl mix greens, arugula, corn, cherry tomatoes, sprinkle on some salt and pepper.
Add lemon juice and olive oil dressing and mix well.
Cut chicken nuggets in halves or quarters.
Add chicken nuggets, parsley, dill and lemon zest.
Mix to unite.
